So, yesterday I was looking through pictures on Pinterest (I love that page), and again I found something that inspired me, this time to make it for Sunday breakfast. Pancake! One, big, sweet pancake,without any sugar, only fruits and honey. I don’t know how about you, but I always try to make my Sunday breakfast special. It’s the only day when I really have time to make something different than sandwiches or muesli.

You can use whatever fruits you like. I had a mango and some frozen strawberries, so the choice was simple, strawberries taste great with mango.
1/2 cup of flour (in the original recipe is 1/4)
1/4 cup of warmed milk
1 pinch of salt
2 teaspoons of honey
1 teaspoon of vanilla sugar
1/2 teaspoon of baking powder
Oven, heated to 200° C
IMPORTANT: use metal frying pan because you will be putting it in the oven!
Take two eggs, separate whites from the yolks and whisk the whites until they are stiff.
In a separate bowl mix yolks with flour, salt, honey, baking powder, when you mix it, pour little by little warmed milk.
Fold the egg whites into the mixture gently with a metal spoon.
In the meantime heat the frying pan and put 1 tablespoon of butter to melt.
Pour the batter on the frying pan and cook it for a few minutes until the edges get a little brown.
Sprinkle the fruits on top.
Put the frying pan into the oven and leave it for around 7-8 minutes until it’s golden.
Serve with honey or with maple syrup.
